Instructions
- Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the quartered potatoes with the olive oil, salt, pepper, and garlic powder until evenly coated. Spread the potatoes in a single layer on the prepared sheet pan.
- Roast the potatoes alone for 15 minutes to give them a head start.
- While the potatoes roast, prepare the glaze: Whisk together the Dijon mustard, honey, apple cider vinegar, and dried thyme in a small bowl.
- Remove the sheet pan from the oven. Push the potatoes to one side of the pan. Add the chicken pieces to the empty space on the pan, ensuring everything is in a single layer.
- Brush half of the honey mustard glaze over the chicken pieces.
- Return the sheet pan to the oven and bake for another 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
- Remove the pan from the oven. Brush the remaining glaze over the chicken and potatoes. Broil for 1 to 2 minutes to caramelize the glaze slightly, watching closely to prevent burning.
- Serve immediately.
Notes
- Cut the potatoes into uniform sizes so they cook evenly. Small potatoes work best for this recipe.
- For crispier potatoes, toss them lightly in cornstarch before adding the olive oil.
- If using chicken thighs, they may require 5 minutes longer cooking time than breasts.
