A simple recipe for sweet and tart roasted pineapple glazed with honey and fresh lime juice, perfect as a side dish or light dessert.

- 1 whole fresh pineapple, peeled, cored, and cut into 1-inch thick rings or spears
- 3 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the honey, lime juice, lime zest, and salt to create the glaze.
- Place the pineapple pieces on the prepared baking sheet in a single layer.
- Brush half of the honey-lime glaze evenly over the pineapple pieces.
- Roast for 15 minutes.
- Remove the pan from the oven, flip the pineapple pieces, and brush with the remaining glaze.
- Return to the oven and roast for another 10 to 15 minutes, or until the edges are slightly caramelized and tender.
- Serve warm.
Notes
- For extra flavor, sprinkle a pinch of chili powder or finely grated fresh ginger over the pineapple before the second roasting period.
- If you prefer a more charred exterior, you can place the pineapple under the broiler for the last 1 to 2 minutes, watching closely to prevent burning.
- To prepare the pineapple, slice off the top and bottom, stand it upright, and carefully slice away the skin in strips following the curve of the fruit. Remove the brown eyes with a small paring knife.
