Prepare a quick and fresh meal featuring chicken coated in a sweet and tart honey lime glaze, served with fresh avocado.

- 1.5 lb boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup fresh lime juice
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe avocados, diced
- 1/4 cup chopped fresh cilantro
- Optional: Cooked rice or quinoa for serving
Instructions
- Combine honey, lime juice, soy sauce, olive oil, minced garlic, cumin, salt, and pepper in a bowl to make the marinade.
- Place chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting and serving. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
- Preheat your grill or a large skillet over medium-high heat. Lightly oil the grates or pan.
- Remove chicken from the marinade, discarding the used marinade. Cook the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit.
- During the last 2 minutes of cooking, brush the chicken with some of the reserved marinade to create a glaze.
- While the chicken rests for 5 minutes, dice the avocados and toss them gently with the chopped cilantro.
- Slice the cooked chicken against the grain. Serve the sliced chicken over rice or quinoa, topped with the avocado-cilantro mixture and a drizzle of any remaining reserved marinade.
Notes
- For a sheet pan meal, bake the chicken at 400 degrees Fahrenheit for 20 to 25 minutes, basting halfway through.
- If you prefer a thicker sauce, simmer the reserved marinade in a small saucepan over medium heat until it reduces slightly, about 5 minutes.
- Use fresh lime juice; bottled juice changes the flavor profile.
