- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 3 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 clove garlic, minced
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the carrots and green beans with olive oil, salt, and pepper on a large baking sheet.
- Roast for 15 minutes.
- While roasting, whisk together the honey, apple cider vinegar, and minced garlic in a small bowl to create the glaze.
- Remove the vegetables from the oven. Drizzle the honey glaze evenly over the carrots and green beans. Toss gently to coat.
- Return the vegetables to the oven and roast for another 10 to 12 minutes, or until the carrots are tender and the glaze is slightly caramelized.
- Serve immediately.
Notes
- For a richer flavor, substitute maple syrup for half of the honey.
- If you prefer a stovetop method, blanch the carrots for 5 minutes, then sauté all vegetables in oil until tender-crisp. Add the glaze mixture and cook until reduced and coating the vegetables.
- Add a pinch of red pepper flakes to the glaze for a slight kick.
