Description
Prepare simple, flavorful shrimp skewers featuring a sweet and savory honey garlic glaze, paired with chunks of fresh pineapple.
Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 1 cup fresh pineapple, cut into 1-inch cubes
- 1/4 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons minced garlic
- 1 tablespoon olive oil
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a medium bowl, whisk together the honey, soy sauce, minced garlic, olive oil, ground ginger, and black pepper to create the glaze.
- Add the shrimp to the glaze mixture. Toss gently to coat all the shrimp. Marinate for 15 to 30 minutes in the refrigerator. Do not marinate for longer than 30 minutes as the acid in the soy sauce can begin to cook the shrimp.
- Preheat your grill to medium heat (about 375°F or 190°C). Lightly oil the grill grates.
- Thread the marinated shrimp and pineapple cubes onto the skewers, alternating between shrimp and pineapple.
- Place the skewers on the preheated grill. Grill for 3 to 4 minutes per side.
- During the last minute of cooking, brush any remaining glaze over the skewers.
- Remove from the grill when the shrimp are pink and opaque throughout. Serve immediately.
Notes
- You can bake these skewers at 400°F (200°C) for 10 to 12 minutes, turning halfway through, if you do not wish to grill.
- For extra flavor, add a pinch of red pepper flakes to the marinade.
- Reserve some of the marinade before adding the raw shrimp to use as a final basting sauce.
