Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Green onions, chopped, for garnish (optional)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, cornstarch, and water. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add broccoli florets, sliced red bell pepper, and snap peas to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  6. Pour the honey garlic sauce mixture into the skillet. Bring to a simmer, stirring constantly, until the sauce thickens.
  7. Return the cooked chicken to the skillet and toss to coat with the sauce.
  8. Serve immediately over cooked rice, garnished with sesame seeds and green onions if desired.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the sauce.
  • Feel free to use other vegetables like carrots, mushrooms, or onions.
