Description

A simple recipe for roasting carrots coated in a sweet and savory glaze made from honey, garlic, and butter.


Ingredients

  • 1.5 lb carrots, peeled and trimmed
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. If carrots are thick, cut them in half lengthwise so they cook evenly. Place the prepared carrots on a large baking sheet.
  3. In a small bowl, whisk together the melted butter, minced garlic, honey, salt, and pepper until combined.
  4. Pour the honey garlic butter mixture over the carrots and toss them well until every piece is coated. Spread the carrots into a single layer on the baking sheet.
  5. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
  6. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For best roasting results, cut carrots into pieces of similar size, about 1/2 inch thick.
  • If you prefer, you can add 1/2 teaspoon of dried thyme to the glaze mixture for extra flavor.
