A simple recipe for roasting carrots coated in a sweet and savory glaze made from honey, garlic, and butter.

- 1.5 lb carrots, peeled and trimmed
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- If carrots are thick, cut them in half lengthwise so they cook evenly. Place the prepared carrots on a large baking sheet.
- In a small bowl, whisk together the melted butter, minced garlic, honey, salt, and pepper until combined.
- Pour the honey garlic butter mixture over the carrots and toss them well until every piece is coated. Spread the carrots into a single layer on the baking sheet.
- Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
- For best roasting results, cut carrots into pieces of similar size, about 1/2 inch thick.
- If you prefer, you can add 1/2 teaspoon of dried thyme to the glaze mixture for extra flavor.
