- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup cooked brown rice
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup breadcrumbs
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil for cooking
Instructions
- Mash the black beans in a large bowl until mostly smooth.
- Add the cooked brown rice, onion, bell pepper, and minced garlic to the bowl. Mix well.
- Stir in the egg, breadcrumbs, cumin, smoked paprika, salt, and pepper. Combine everything until a firm mixture forms.
- Divide the mixture into four equal portions and shape them into firm patties.
- Heat the olive oil in a large skillet over medium heat.
- Cook the veggie burgers for 4 to 5 minutes per side, until nicely browned and heated through.
- Serve immediately on your favorite bun with your preferred toppings.
Notes
- For a firmer patty, chill the mixture for 30 minutes before shaping.
- You can bake these burgers at 375°F (190°C) for about 20 minutes, flipping halfway through.
- Feel free to substitute black beans with chickpeas or lentils.
