Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup cooked brown rice
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking


Instructions

  1. Mash the black beans in a large bowl until mostly smooth.
  2. Add the cooked brown rice, onion, bell pepper, and minced garlic to the bowl. Mix well.
  3. Stir in the egg, breadcrumbs, cumin, smoked paprika, salt, and pepper. Combine everything until a firm mixture forms.
  4. Divide the mixture into four equal portions and shape them into firm patties.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Cook the veggie burgers for 4 to 5 minutes per side, until nicely browned and heated through.
  7. Serve immediately on your favorite bun with your preferred toppings.

Notes

  • For a firmer patty, chill the mixture for 30 minutes before shaping.
  • You can bake these burgers at 375°F (190°C) for about 20 minutes, flipping halfway through.
  • Feel free to substitute black beans with chickpeas or lentils.
