- 6 cups ripe peaches, peeled, pitted, and chopped
- 4 cups granulated sugar
- 1/4 cup lemon juice
- 1 box (1.75 oz) powdered fruit pectin
Instructions
- Prepare your canning jars, lids, and rings.
- In a large pot, combine chopped peaches, sugar, and lemon juice.
- Stir in the powdered fruit pectin.
- Bring the mixture to a rolling boil over high heat, stirring constantly.
- Boil for 1 minute, still stirring.
- Remove from heat. Skim off any foam.
- Ladle hot jam into prepared jars, leaving 1/4 inch headspace.
- Wipe jar rims clean and place lids and rings on tightly.
- Process jars in a boiling water canner for 10 minutes (adjust for altitude if necessary).
- Remove jars from canner and let cool completely on a towel-lined counter.
- Check for seals. Store sealed jars in a cool, dark place.
