Ingredients

- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon fennel seeds
- 1 teaspoon black peppercorns
- 1 teaspoon green cardamom pods
- 1/2 teaspoon whole cloves
- 1/2 teaspoon cinnamon sticks, broken into pieces
- 1/4 teaspoon ground nutmeg
Instructions
- Toast coriander seeds, cumin seeds, fennel seeds, black peppercorns, cardamom pods, cloves, and cinnamon sticks in a dry skillet over medium heat for 2-3 minutes until fragrant.
- Let the toasted spices cool completely.
- Grind the cooled spices in a spice grinder or mortar and pestle until you achieve a fine powder.
- Stir in the ground nutmeg.
- Store in an airtight container in a cool, dark place.
Notes
- For a stronger flavor, toast the spices a little longer, but be careful not to burn them.
- Adjust the quantities of spices to your personal preference.
- Freshly ground garam masala has the best flavor.
