Ingredients

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon green cardamom pods
  • 1/2 teaspoon whole cloves
  • 1/2 teaspoon cinnamon sticks, broken into pieces
  • 1/4 teaspoon ground nutmeg


Instructions

  1. Toast coriander seeds, cumin seeds, fennel seeds, black peppercorns, cardamom pods, cloves, and cinnamon sticks in a dry skillet over medium heat for 2-3 minutes until fragrant.
  2. Let the toasted spices cool completely.
  3. Grind the cooled spices in a spice grinder or mortar and pestle until you achieve a fine powder.
  4. Stir in the ground nutmeg.
  5. Store in an airtight container in a cool, dark place.

Notes

  • For a stronger flavor, toast the spices a little longer, but be careful not to burn them.
  • Adjust the quantities of spices to your personal preference.
  • Freshly ground garam masala has the best flavor.
