Description

Make fun, homemade fortune cookies perfect for Lunar New Year celebrations. These cookies are simple to make and bring joy to any gathering.


Ingredients

  • 1 large egg white
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • A few drops of vegetable oil for greasing
  • Small slips of paper with fortunes written on them


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a medium bowl, whisk the egg white until it is slightly frothy.
  3. Gradually whisk in the sugar until completely dissolved.
  4. Stir in the all-purpose flour, vanilla extract, and almond extract until you have a smooth batter.
  5. Drop about 1 teaspoon of batter onto the prepared baking sheet.
  6. Use the back of a spoon to spread the batter into a very thin circle, about 3 inches in diameter. Work quickly, as the batter sets fast.
  7. Bake for 5 to 7 minutes, or until the edges are golden brown but the center is still pale.
  8. Working very quickly, remove a cookie from the oven using a thin spatula. Place a fortune slip in the center.
  9. Fold the cookie in half over your finger or the edge of a small bowl to create the classic crease.
  10. Immediately wrap the folded cookie around the rim of a small glass or mug to set the curved shape.
  11. Let the cookies cool completely to harden. Repeat the process with the remaining batter, baking only 2 or 3 cookies at a time.

Notes

  • Work fast when shaping the cookies; they harden quickly when they cool.
  • If a cookie hardens before you can fold it, return it to the oven for 30 seconds to soften.
  • You can use any small, non-toxic paper for your fortunes.
