  • 4 cups chopped ripe pears (about 4-5 medium pears)
  • 1 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 cinnamon stick
  • 1 teaspoon ground cinnamon


Instructions

  1. Prepare your pears: Wash, peel, core, and chop the ripe pears into small pieces.
  2. Combine ingredients: In a large, heavy-bottomed pot, combine the chopped pears, granulated sugar, lemon juice, cinnamon stick, and ground cinnamon.
  3. Cook the preserves: Stir everything together and bring the mixture to a boil over medium-high heat.
  4. Simmer and thicken: Reduce the heat to low and let the preserves simmer, stirring occasionally, for about 45-60 minutes, or until thickened. The pears should be tender and the mixture should coat the back of a spoon.
  5. Remove cinnamon stick: Carefully remove and discard the cinnamon stick.
  6. Jar the preserves: Ladle the hot preserves into clean jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean and seal them with lids.
  7. Process for storage: Process the jars in a boiling water bath for 10 minutes (adjust time for altitude if necessary).
  8. Cool and store: Let the jars cool completely on the counter. Check seals before storing in a cool, dark place.
