Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 1 sleeve (about 36) saltine crackers
  • Optional: chopped nuts, sprinkles, or sea salt for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. Arrange the saltine crackers in a single layer on the prepared baking sheet.
  3. In a medium saucepan, melt the butter over medium heat.
  4. Add the brown sugar and salt to the melted butter. Stir constantly until the sugar is dissolved and the mixture comes to a boil.
  5. Boil for 3-5 minutes, stirring occasionally, until it thickens slightly into a toffee sauce.
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Carefully pour the hot toffee mixture evenly over the saltine crackers, spreading it to cover completely.
  8. Bake for 5-7 minutes, or until the toffee is bubbly.
  9. Remove from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Let them sit for a minute to soften.
  10. Spread the melted chocolate to cover the toffee.
  11. If using, sprinkle your desired toppings over the melted chocolate.
  12. Let the toffee cool completely at room temperature, or speed up the process in the refrigerator until the chocolate is firm.
  13. Break the toffee into pieces and enjoy.

Notes

  • For a smoother topping, you can melt the chocolate chips in a double boiler or in the microwave in 30-second intervals, stirring in between, before spreading it over the toffee.
  • Store the finished toffee in an airtight container at room temperature for up to a week.
  • This recipe is easily adaptable; feel free to use milk chocolate or dark chocolate chips.
