- 1 cup (2 sticks) unsalted butter
- 2 cups packed light brown sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 12 ounces semi-sweet chocolate chips
- 1 sleeve (about 36) saltine crackers
- Optional: chopped nuts, sprinkles, or sea salt for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
- Arrange the saltine crackers in a single layer on the prepared baking sheet.
- In a medium saucepan, melt the butter over medium heat.
- Add the brown sugar and salt to the melted butter. Stir constantly until the sugar is dissolved and the mixture comes to a boil.
- Boil for 3-5 minutes, stirring occasionally, until it thickens slightly into a toffee sauce.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Carefully pour the hot toffee mixture evenly over the saltine crackers, spreading it to cover completely.
- Bake for 5-7 minutes, or until the toffee is bubbly.
- Remove from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Let them sit for a minute to soften.
- Spread the melted chocolate to cover the toffee.
- If using, sprinkle your desired toppings over the melted chocolate.
- Let the toffee cool completely at room temperature, or speed up the process in the refrigerator until the chocolate is firm.
- Break the toffee into pieces and enjoy.
Notes
- For a smoother topping, you can melt the chocolate chips in a double boiler or in the microwave in 30-second intervals, stirring in between, before spreading it over the toffee.
- Store the finished toffee in an airtight container at room temperature for up to a week.
- This recipe is easily adaptable; feel free to use milk chocolate or dark chocolate chips.
