- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- 1 cup fresh or canned (drained) pineapple chunks
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 1 clove garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon vegetable oil
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the soy sauce, brown sugar, ketchup, rice vinegar, ginger, and minced garlic to make the glaze base.
- In a separate small bowl, mix the cornstarch and water until smooth to create a slurry. Whisk this slurry into the glaze base.
- In a large bowl, toss the cubed chicken, bell peppers, and red onion with the vegetable oil.
- Pour half of the prepared Hawaiian glaze over the chicken and vegetables. Toss to coat everything evenly.
- Spread the coated chicken and vegetables in a single layer on the prepared baking sheet.
- Roast for 15 minutes.
- Remove the sheet pan from the oven. Add the pineapple chunks to the pan and toss gently with the chicken and vegetables.
- Brush the remaining half of the glaze over the chicken and pineapple mixture.
- Return the sheet pan to the oven and roast for another 5 to 10 minutes, or until the chicken is cooked through and the glaze is slightly caramelized.
- Serve immediately.
Notes
- Use parchment paper or aluminum foil on your sheet pan to reduce scrubbing time.
- If you prefer thicker sauce, cook the glaze on the stovetop until it thickens before tossing with the ingredients.
- For extra color, add some sliced green onions as a garnish before serving.
