  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 3 cups chicken broth
  • 8 ounces dry pasta (penne or rotini work well)
  • 1/2 cup heavy cream or half-and-half
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Brown the ground turkey in a large skillet or pot over medium heat. Drain off any excess fat.
  2. Add olive oil, onion, and garlic to the skillet. Cook until the onion softens, about 3 minutes.
  3. Stir in Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their juice) and chicken broth. Bring the mixture to a boil.
  5. Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most liquid is absorbed.
  6. Remove the skillet from the heat. Stir in the heavy cream and chopped spinach until the spinach wilts.
  7. Stir in the Parmesan cheese until the sauce is creamy. Serve immediately.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef.
  • For a slight tang, add a splash of white wine when deglazing the pan after browning the turkey.
  • If the sauce seems too thick after resting, add a splash more broth or milk to reach your desired consistency.
