- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning

- 1 (14.5 ounce) can diced tomatoes, undrained
- 3 cups chicken broth
- 8 ounces dry pasta (penne or rotini work well)
- 1/2 cup heavy cream or half-and-half
- 2 cups fresh spinach, roughly chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Brown the ground turkey in a large skillet or pot over medium heat. Drain off any excess fat.
- Add olive oil, onion, and garlic to the skillet. Cook until the onion softens, about 3 minutes.
- Stir in Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in the diced tomatoes (with their juice) and chicken broth. Bring the mixture to a boil.
- Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most liquid is absorbed.
- Remove the skillet from the heat. Stir in the heavy cream and chopped spinach until the spinach wilts.
- Stir in the Parmesan cheese until the sauce is creamy. Serve immediately.

- You can substitute ground turkey with ground chicken or lean ground beef.
- For a slight tang, add a splash of white wine when deglazing the pan after browning the turkey.
