- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound potatoes, peeled and diced into 1/2-inch cubes
- 1/2 cup beef broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1 cup chopped bell peppers or spinach
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add chopped onion and cook until softened, about 3-5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced potatoes to the skillet. If using, add bell peppers now.
- Pour in beef broth, salt, and pepper. Stir to combine.
- Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
- If using spinach, stir it in during the last 5 minutes of cooking until wilted.
- Serve hot.
Notes
- For crispier potatoes, you can parboil them for 5 minutes before adding them to the skillet.
- Feel free to add other vegetables like corn, peas, or diced carrots.
- Top with a fried egg for an extra delicious touch.
