Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound potatoes, peeled and diced into 1/2-inch cubes
  • 1/2 cup beef broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup chopped bell peppers or spinach


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Add chopped onion and cook until softened, about 3-5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add diced potatoes to the skillet. If using, add bell peppers now.
  6. Pour in beef broth, salt, and pepper. Stir to combine.
  7. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
  8. If using spinach, stir it in during the last 5 minutes of cooking until wilted.
  9. Serve hot.

Notes

  • For crispier potatoes, you can parboil them for 5 minutes before adding them to the skillet.
  • Feel free to add other vegetables like corn, peas, or diced carrots.
  • Top with a fried egg for an extra delicious touch.
