- 1 cup cooked rice (brown or white)
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste

Instructions
- Preheat grill to medium-high heat.
- Toss bell peppers, zucchini, and red onion with olive oil, salt, and pepper.
