Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 zucchini, chopped
  • 1 bell pepper (any color), chopped
  • 1 red onion, chopped
  • 1 pint cherry tomatoes
  • For the Salad:
  • 4 cups mixed greens
  • 1 cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the shrimp with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
  3. Thread the shrimp, zucchini chunks, bell pepper chunks, red onion chunks, and cherry tomatoes onto skewers, alternating the ingredients.
  4. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through and the vegetables are tender-crisp.
  5. While the skewers are grilling, prepare the salad. In a large bowl, combine the mixed greens, cucumber, halved cherry tomatoes, and sliced red onion.
  6. In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, salt, and pepper for the dressing.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve the grilled shrimp skewers immediately with the fresh veggie salad.

Notes

  • You can marinate the shrimp for 15-30 minutes before grilling for extra flavor.
  • Feel free to add other vegetables to your skewers like mushrooms or corn on the cob.
