- 1.5 lbs salmon fillet
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño, minced (seeds removed for less heat)
- 1 lime, juiced
Instructions
- Preheat your grill to medium-high heat.
- Brush the salmon fillet with olive oil and season with salt and pepper.
- Grill the salmon for about 4-6 minutes per side, or until cooked through and flakes easily with a fork.
- While the salmon grills, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño, and lime juice.
- Gently mix the salsa ingredients together.
- Serve the grilled salmon topped with the fresh mango salsa.

- Adjust jalapeño amount to your spice preference.
- For a sweeter salsa, use a very ripe mango.
