Ingredients

  • 1.5 lbs salmon fillet
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, minced (seeds removed for less heat)
  • 1 lime, juiced


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillet with olive oil and season with salt and pepper.
  3. Grill the salmon for about 4-6 minutes per side, or until cooked through and flakes easily with a fork.
  4. While the salmon grills, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño, and lime juice.
  5. Gently mix the salsa ingredients together.
  6. Serve the grilled salmon topped with the fresh mango salsa.
