Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 1 cup mascarpone cheese
  • 2 tablespoons honey, plus more for drizzling
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Preheat your grill to medium heat.
  2. Brush the cut sides of the peaches with olive oil.
  3. Place the peaches cut-side down on the grill.
  4. Grill for 4-5 minutes per side, until tender and slightly caramelized.
  5. While the peaches are grilling, in a small bowl, combine the mascarpone cheese, honey, and vanilla extract. Stir until smooth.
  6. Remove the peaches from the grill and let them cool slightly.
  7. Spoon the honey mascarpone mixture into the hollows of the grilled peaches.
  8. Drizzle with extra honey and garnish with fresh mint leaves, if desired.

  • Choose peaches that are ripe but still firm to the touch.
