- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 1 cup mascarpone cheese
- 2 tablespoons honey, plus more for drizzling
- 1 teaspoon vanilla extract
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your grill to medium heat.
- Brush the cut sides of the peaches with olive oil.
- Place the peaches cut-side down on the grill.
- Grill for 4-5 minutes per side, until tender and slightly caramelized.
- While the peaches are grilling, in a small bowl, combine the mascarpone cheese, honey, and vanilla extract. Stir until smooth.
- Remove the peaches from the grill and let them cool slightly.
- Spoon the honey mascarpone mixture into the hollows of the grilled peaches.
- Drizzle with extra honey and garnish with fresh mint leaves, if desired.

- Choose peaches that are ripe but still firm to the touch.
- You can also use a grill pan indoors if you don’t have an outdoor grill.
