- 2 ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 4 cups arugula
- 1/2 cup crumbled feta cheese

- For the Vinaigrette:

- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey or maple syrup

Instructions
- Preheat your grill to medium-high heat.
- Brush the cut sides of the peaches with 1 tablespoon of olive oil.
- Grill the peaches for 3-4 minutes per side, until slightly softened and grill marks appear. Let cool slightly, then slice each half into wedges.
