  • 2 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 4 cups arugula
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted pecans or walnuts (optional)
  • For the Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the cut sides of the peaches with 1 tablespoon of olive oil.
  3. Grill the peaches for 3-4 minutes per side, until slightly softened and grill marks appear. Let cool slightly, then slice each half into wedges.
