Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • Wooden or metal skewers, soaked if wooden


Instructions

  1. In a medium bowl, whisk together honey, sriracha sauce, soy sauce, rice vinegar, grated ginger, minced garlic, and olive oil.
  2. Add the cubed chicken to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken onto the skewers, leaving a small space between each piece. Discard any leftover marinade.
  5. Season the skewers with salt and pepper.
  6. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Serve hot.

  • For extra flavor, you can marinate the chicken overnight.
