- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup honey
- 1/4 cup sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers, soaked if wooden
Instructions
- In a medium bowl, whisk together honey, sriracha sauce, soy sauce, rice vinegar, grated ginger, minced garlic, and olive oil.
- Add the cubed chicken to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a small space between each piece. Discard any leftover marinade.
- Season the skewers with salt and pepper.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve hot.

- For extra flavor, you can marinate the chicken overnight.
