- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/4 cup crumbled cotija cheese, plus more for garnish
- 2 tablespoons chopped fresh cilantro, plus more for garnish
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder, plus more for garnish
- 1/4 teaspoon garlic powder
- Pinch of salt
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- Place the husked corn directly on the hot grill grates. Grill for 10-15 minutes, turning occasionally, until the kernels are tender and lightly charred.
- While the corn is grilling, prepare the crema. In a small bowl, combine the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, garlic powder, and salt. Mix well until smooth.
- Once the corn is grilled, remove it from the grill.
- Generously spread the prepared crema mixture over each ear of corn, ensuring all sides are coated.
- Sprinkle with additional cotija cheese, chili powder, and fresh cilantro.
- Serve immediately with lime wedges.
Notes
- For extra flavor, you can brush the corn with a little olive oil before grilling.
- If you cannot find cotija cheese, you can substitute with crumbled feta cheese.
- Adjust the amount of chili powder to your spice preference.
