Description

Grilled elote is a flavorful Mexican street corn on the cob. Charred kernels, creamy sauce, and zesty seasonings make a delightful side dish or snack.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/4 cup crumbled cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • Lime wedges, for serving


Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the husked corn directly on the hot grill grates. Grill for 10-15 minutes, turning occasionally, until the kernels are tender and lightly charred.
  3. While the corn is grilling, prepare the crema. In a small bowl, combine the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, garlic powder, and salt. Mix well until smooth.
  4. Once the corn is grilled, remove it from the grill.
  5. Generously spread the prepared crema mixture over each ear of corn, ensuring all sides are coated.
  6. Sprinkle with additional cotija cheese, chili powder, and fresh cilantro.
  7. Serve immediately with lime wedges.

Notes

  • For extra flavor, you can brush the corn with a little olive oil before grilling.
  • If you cannot find cotija cheese, you can substitute with crumbled feta cheese.
