- 1/4 cup Greek Vinaigrette dressing
- 1/2 cup chopped cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped red onion
- 1/2 cup crumbled feta cheese
- 1/2 cup cooked chickpeas
- 2 cups chopped romaine lettuce
Instructions
- Pour the Greek Vinaigrette dressing into the bottom of a wide-mouth mason jar.
- Carefully layer the next ingredients over the dressing: cucumber, tomatoes, and red onion.
- Add the feta cheese and chickpeas next.
- Pack the chopped romaine lettuce tightly on top, filling the jar.
- Seal the jar tightly and store it in the refrigerator.
- When ready to eat, shake the jar well or pour the salad into a bowl to mix the dressing.
Notes
- Always place the dressing at the very bottom of the jar.
- Keep wet ingredients separate from the greens to prevent sogginess.
