Description

This gluten-free squash casserole offers a comforting, celiac-safe dish. It features tender squash baked with a creamy sauce and a crispy, gluten-free topping.


Ingredients

  • 2 lbs yellow squash, thinly sliced
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup gluten-free all-purpose flour blend
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup gluten-free breadcrumbs (such as made from gluten-free bread or crushed gluten-free crackers)
  • 2 tablespoons melted butter (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large pot, bring lightly salted water to a boil. Add the sliced yellow squash and cook for 5-7 minutes, or until tender-crisp. Drain well and set aside.
  3. In a medium saucepan, melt 1/4 cup butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Stir in the gluten-free all-purpose flour blend and cook for 1 minute, stirring constantly, to create a roux.
  5. Gradually whisk in the milk, stirring continuously to prevent lumps. Cook until the sauce thickens, about 3-5 minutes.
  6. Remove the saucepan from the heat. Stir in the shredded cheddar cheese, salt, and black pepper until the cheese is melted and the sauce is smooth.
  7. Add the cooked squash to the cheese sauce and gently stir to coat.
  8. Pour the squash mixture into the prepared baking dish.
  9. In a small bowl, combine the gluten-free breadcrumbs and 2 tablespoons melted butter. Sprinkle this mixture evenly over the top of the squash casserole.
  10. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  11. Let the casserole stand for a few minutes before serving.

Notes

  • For extra flavor, add a pinch of garlic powder or a dash of paprika to the cheese sauce.
  • You can use a mix of yellow squash and zucchini for variety.
