Instructions

- Stir in the melted coconut oil (or butter), maple syrup (or honey), eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the gluten-free flour blend, almond flour (or rice flour), baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- If using, fold in chopped nuts or chocolate chips.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
