Ingredients

  • 1 cup gluten-free all-purpose flour blend
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 large egg yolk
  • 1/4 cup granulated sugar
  • 2 cups milk
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon


Instructions

  1. For the pastry: Combine gluten-free flour and butter in a bowl. Cut butter into flour until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Wrap in plastic and chill for 30 minutes.
  2. Preheat oven to 400°F (200°C). Roll out dough thinly on a floured surface. Cut into desired shapes. Place on a baking sheet and bake for 12-15 minutes, or until golden brown.
  3. For the custard: Whisk egg yolk and sugar until pale. In a saucepan, heat milk until simmering. Gradually whisk hot milk into egg mixture. Return to saucepan and cook over medium heat, stirring constantly, until thickened. Stir in vanilla extract. Let cool.
  4. For the apples: Toss sliced apples with lemon juice, brown sugar, and cinnamon.
  5. Assemble the mille feuille: Layer pastry, custard, and apples. Repeat layers.
