- 1/4 cup ice water
- 1 large egg yolk
- 1/4 cup granulated sugar
- 2 cups milk
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and thinly sliced
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
Instructions
- For the pastry: Combine gluten-free flour and butter in a bowl. Cut butter into flour until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Wrap in plastic and chill for 30 minutes.
- Preheat oven to 400°F (200°C). Roll out dough thinly on a floured surface. Cut into desired shapes. Place on a baking sheet and bake for 12-15 minutes, or until golden brown.
- For the custard: Whisk egg yolk and sugar until pale. In a saucepan, heat milk until simmering. Gradually whisk hot milk into egg mixture. Return to saucepan and cook over medium heat, stirring constantly, until thickened. Stir in vanilla extract. Let cool.
- For the apples: Toss sliced apples with lemon juice, brown sugar, and cinnamon.
- Assemble the mille feuille: Layer pastry, custard, and apples. Repeat layers.
