Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (100g) powdered sugar
  • 1/4 cup (50g) molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Pinch of salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 2 tablespoons heavy cream


Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, powdered sugar, molasses, ground ginger, cinnamon, cloves, and salt. Mix until well combined.
  2. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  3. Chill the truffle balls in the refrigerator for at least 30 minutes, or until firm.
  4. While the truffles are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth and melted.
  5. Dip each chilled truffle into the melted chocolate, ensuring it is fully coated.
  6. Place the coated truffles back on the parchment-lined baking sheet.
  7. Allow the chocolate to set completely at room temperature or in the refrigerator.
