Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Cook the shrimp: While the pasta cooks, heat olive oil in a large skillet or pan over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to reduce slightly.
  4. Combine: Add the cooked pasta to the skillet with the sauce. Add the butter and chopped parsley, tossing to coat the pasta. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  5. Add shrimp and season: Return the cooked shrimp to the skillet and toss gently to combine. Season with salt, black pepper, and red pepper flakes (if using) to taste.
  6. Serve: Serve immediately, garnished with extra fresh parsley if desired.
