Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound large shrimp, peeled and deveined
  • 2 cups chopped garlic scapes
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Cooked rice, for serving


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add garlic scapes to the skillet and stir fry for 3-5 minutes, or until slightly tender.
  4. In a small bowl, whisk together soy sauce, honey, sesame oil, ginger, and minced garlic.
  5. Pour sauce over garlic scapes and stir to coat.
  6. Return shrimp to the skillet and toss with the sauce and garlic scapes.
  7. Cook for 1-2 minutes more, or until everything is heated through.
  8. Serve immediately over cooked rice.

  • Add other vegetables like bell peppers or broccoli for more color and nutrients.
