- 1 tablespoon vegetable oil
- 1 pound large shrimp, peeled and deveined
- 2 cups chopped garlic scapes
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/2 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Cooked rice, for serving
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add garlic scapes to the skillet and stir fry for 3-5 minutes, or until slightly tender.
- In a small bowl, whisk together soy sauce, honey, sesame oil, ginger, and minced garlic.
- Pour sauce over garlic scapes and stir to coat.
- Return shrimp to the skillet and toss with the sauce and garlic scapes.
- Cook for 1-2 minutes more, or until everything is heated through.
- Serve immediately over cooked rice.
Notes
- Adjust the amount of honey to your preference for sweetness.
- Add other vegetables like bell peppers or broccoli for more color and nutrients.
- Serve with a sprinkle of sesame seeds for extra flavor and texture.
