- 1.5 lbs boneless, skinless chicken breasts, cut into bite-size pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Reduce heat to medium. Add minced garlic to the skillet and cook for 1 minute until fragrant. Do not burn the garlic.
- Pour in the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet.
- Stir in the dried oregano. Bring the sauce to a simmer.
- Return the cooked chicken to the skillet. Toss to coat with the sauce.
- Simmer for 2-3 minutes until the sauce slightly thickens.
- Garnish with fresh parsley before serving.
Notes
- Serve this skillet dish over brown rice or with a side of steamed vegetables for a complete meal.
- For extra zest, add the zest of half a lemon to the sauce.
- If you prefer a richer sauce, add 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water during the simmering step.
