- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- Roast the potatoes for 20 minutes, or until they begin to soften.
- While the potatoes roast, pat the steak cubes dry with paper towels. Season them generously with salt and pepper.
- In a large oven-safe skillet, melt the butter over medium-high heat.
- Add the steak bites to the hot skillet in a single layer. Cook for 2-3 minutes per side, until browned. Do not overcrowd the pan; cook in batches if necessary.
- Add the minced garlic, dried rosemary, and dried thyme to the skillet with the steak. Stir for 1 minute until fragrant.
- Carefully add the partially roasted potatoes to the skillet with the steak. Toss everything together to coat in the garlic butter.
- Transfer the skillet to the preheated oven. Bake for another 10-15 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
Notes
- For extra flavor, add a splash of beef broth or red wine to the skillet with the garlic.
- You can use other cuts of steak like ribeye or New York strip, adjusting cooking time as needed.
