Description

Ingredients

  • 1 pound linguine or spaghetti
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup unsalted butter
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook the pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Add the minced garlic and red pepper flakes (if using) to the same skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  5. Pour in the white wine or chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
  6. Stir in the butter until melted.
  7. Return the cooked shrimp to the skillet. Add the drained pasta, chopped parsley, and lemon juice.
  8. Toss everything together until the pasta and shrimp are well coated in the sauce. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  9. Season with salt and freshly ground black pepper to taste.
  10. Serve immediately.

Notes

  • For an extra touch of richness, you can add a tablespoon of heavy cream to the sauce.
  • Feel free to add other vegetables like cherry tomatoes or spinach for added color and nutrients.
  • Adjust the red pepper flakes to your preferred level of spice.
