Description

- 1 pound linguine or spaghetti
- 2 tablespoons olive oil
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1/4 cup unsalted butter
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- Cook the pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the minced garlic and red pepper flakes (if using) to the same skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Pour in the white wine or chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
- Stir in the butter until melted.
- Return the cooked shrimp to the skillet. Add the drained pasta, chopped parsley, and lemon juice.
- Toss everything together until the pasta and shrimp are well coated in the sauce. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately.
Notes
- For an extra touch of richness, you can add a tablespoon of heavy cream to the sauce.
- Feel free to add other vegetables like cherry tomatoes or spinach for added color and nutrients.
- Adjust the red pepper flakes to your preferred level of spice.
