Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a food processor, blend the soaked and drained dates until a smooth, thick paste forms. Scrape down the sides as needed.
- Add the eggs, melted oil, and vanilla extract to the date paste. Process until just combined.
- In a separate bowl, whisk together the cocoa powder, almond flour, baking powder, and salt.
- Add the dry ingredients to the wet mixture in the food processor. Pulse until the batter is just mixed and smooth. Do not overmix.
- Fold in half of the chocolate chips, if using.
- Spread the batter evenly into the prepared baking pan. Sprinkle the remaining chocolate chips on top.
- Bake for 22 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs, not wet batter.
- Let the brownies cool completely in the pan before lifting them out using the parchment overhang. Cool completely before slicing for the fudgiest texture.
