  • Author: Lina Kohn
  • Total Time: 40 minutes plus cooling time
  • Yield: 16 brownies
  • Diet: Vegetarian

Description

These fudgy date brownies offer a rich, chocolate indulgence naturally sweetened primarily with Medjool dates. They provide a decadent treat while avoiding refined sugars, making them a satisfying, healthier alternative for your sweet cravings.

Ingredients

Scale
  • 1 cup Medjool dates, pitted and soaked in hot water for 10 minutes, drained
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour (or other gluten-free flour)
  • 1/4 cup melted coconut oil or butter
  • 2 large eggs (or flax eggs for vegan option)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup dark chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a food processor, blend the soaked and drained dates until a smooth, thick paste forms. Scrape down the sides as needed.
  3. Add the eggs, melted oil, and vanilla extract to the date paste. Process until just combined.
  4. In a separate bowl, whisk together the cocoa powder, almond flour, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture in the food processor. Pulse until the batter is just mixed and smooth. Do not overmix.
  6. Fold in half of the chocolate chips, if using.
  7. Spread the batter evenly into the prepared baking pan. Sprinkle the remaining chocolate chips on top.
  8. Bake for 22 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs, not wet batter.
  9. Let the brownies cool completely in the pan before lifting them out using the parchment overhang. Cool completely before slicing for the fudgiest texture.

Notes

  • Soaking the dates is crucial; it softens them so they blend into a smooth, caramel-like base.
  • For the best fudgy texture, allow the brownies to cool fully, preferably chilling them for an hour after cooling on the counter.
  • You can substitute almond flour with oat flour for a different texture profile.
