Description

This is a recipe for a rich and fudgy chocolate zucchini bundt cake topped with a luscious ganache.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 3/4 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups grated zucchini, squeezed dry
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 12-cup bundt pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cocoa powder, and sugar.
  3. In a separate medium bowl, whisk together vegetable oil, eggs, vanilla extract, and buttermilk.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini and chocolate chips.
  6. Pour the batter into the prepared bundt pan and spread evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. While the cake is cooling, make the ganache. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  10. Remove from heat and pour the hot cream over the chocolate chips in a heatproof bowl. Let stand for 5 minutes, then whisk until smooth and glossy.
  11. Once the cake is completely cool, pour the ganache over the top, allowing it to drip down the sides.
  12. Let the ganache set before slicing and serving.

Notes

  • Make sure to squeeze the excess moisture out of the grated zucchini before adding it to the batter.
  • Do not overmix the batter, as this can result in a tough cake.
  • For best results, use high-quality chocolate chips for the ganache.
