  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or cream


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate large bowl, cream together the softened butter, oil, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the shredded zucchini and chopped nuts (if using).
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bars cool completely in the pan on a wire rack.
  10. While the bars are cooling, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  11. Gradually add the powdered sugar, beating until well combined.
  12. Stir in the vanilla extract and milk or cream until the frosting is smooth and spreadable.
  13. Once the bars are completely cool, spread the cream cheese frosting evenly over the top.
  14. Cut into squares and serve.
