Description
Make these Baked Cinnamon Sugar French Toast Muffins for an easy, portable, and delicious breakfast. They taste just like classic French toast but bake up perfectly in a muffin tin. This recipe is great for meal prep and pleasing everyone at your table.
Ingredients
Scale
- 1 loaf (about 16 ounces) day-old bread (brioche or challah works best), cut into 1-inch cubes
- 6 large eggs
- 1 1/2 cups milk (whole or 2%)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (for batter)
- 1/2 cup (1 stick) unsalted butter, melted (for topping)
- 1/2 cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 12-cup standard muffin tin well.
- Place the bread cubes evenly into the prepared muffin cups, filling them about three-quarters full.
- In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, salt, and 1/2 cup granulated sugar until well combined.
- Pour the egg mixture evenly over the bread cubes in the muffin tin, ensuring all the bread soaks up the custard. Let it sit for 5 minutes.
- Bake for 20 to 25 minutes, or until the tops are set and lightly golden brown.
- While the muffins bake, mix the remaining 1/2 cup granulated sugar and 1 teaspoon cinnamon in a small bowl for the topping.
- Remove the muffins from the oven. Working quickly, brush the tops of the warm muffins generously with the melted butter.
- Sprinkle the cinnamon-sugar mixture over the buttered tops immediately.
- Let the muffins cool slightly in the tin before carefully removing them. Enjoy warm or at room temperature.
Notes
- Using slightly stale or day-old bread prevents the muffins from becoming soggy.
- For extra richness, substitute half of the milk with heavy cream.
- You can prepare the batter and soak the bread the night before. Cover and refrigerate, then bake in the morning.
- These muffins freeze well. Thaw overnight and reheat in the oven or microwave.
