- Gently fold in the vanilla and almond extracts.
- Sift about one-third of the flour-sugar mixture over the egg whites and gently fold it in. Repeat this process two more times, folding until just combined. Be careful not to overmix.
- Pour the batter into an ungreased angel food cake pan. Run a knife through the batter to remove any large air pockets.
- Bake for 35-40 minutes, or until the cake is golden brown and springs back when lightly touched.
- Immediately invert the pan onto a wire rack or a bottleneck to cool completely. This prevents the cake from collapsing.
- Once cooled, run a thin knife around the edges of the pan to loosen the cake before inverting it onto a serving plate.
