Description

Make a creamy, bright avocado lime dressing in five minutes using a blender or food processor.


Ingredients

  • 1 ripe avocado
  • 1/4 cup fresh lime juice
  • 1/4 cup water (or more for thinner consistency)
  • 1/4 cup fresh cilantro leaves
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Place the avocado flesh, lime juice, water, cilantro, garlic, salt, and pepper into a small blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
  3. Check the consistency. Add water, one tablespoon at a time, until you reach your desired dressing thickness.
  4. Taste and adjust salt or lime juice as needed.
  5. Serve immediately or store in the refrigerator.

Notes

  • For a tangier flavor, add 1 teaspoon of apple cider vinegar.
  • If you do not have fresh cilantro, you can omit it, but the flavor will change.
  • Use cold water to help keep the dressing fresh longer.
