Make a creamy, bright avocado lime dressing in five minutes using a blender or food processor.
Ingredients

- 1 ripe avocado
- 1/4 cup fresh lime juice
- 1/4 cup water (or more for thinner consistency)
- 1/4 cup fresh cilantro leaves
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the avocado flesh, lime juice, water, cilantro, garlic, salt, and pepper into a small blender or food processor.
- Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
- Check the consistency. Add water, one tablespoon at a time, until you reach your desired dressing thickness.
- Taste and adjust salt or lime juice as needed.
- Serve immediately or store in the refrigerator.
Notes
- For a tangier flavor, add 1 teaspoon of apple cider vinegar.
- If you do not have fresh cilantro, you can omit it, but the flavor will change.
- Use cold water to help keep the dressing fresh longer.
