  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 teaspoon red pepper flakes
  • Fresh cilantro, chopped, for garnish


Instructions

  1. In a bowl, combine yogurt, lemon juice, cumin, coriander, turmeric, garam masala, cayenne pepper, and salt. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or preferably 2-4 hours in the refrigerator.
  2. Heat ghee or oil in a large skillet or Dutch oven over medium-high heat. Add marinated chicken in batches and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and ginger and cook for 1 minute more until fragrant.
  4. Stir in crushed tomatoes and red pepper flakes. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20 minutes, or until chicken is cooked through and tender.
  6. Stir in heavy cream and cook for another 5 minutes until heated through and the sauce has thickened slightly.
  7. Garnish with fresh cilantro before serving.

Notes

  • For an even spicier dish, increase the cayenne pepper and red pepper flakes.
  • Serve with basmati rice or naan bread.
