A simple and delicious pasta salad perfect for any occasion.


Ingredients

  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, black olives, and parsley.
  3. Pour Italian dressing over the pasta mixture and toss to coat.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
