Ingredients

- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, black olives, and parsley.
- Pour Italian dressing over the pasta mixture and toss to coat.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.

- You can add other vegetables like bell peppers, carrots, or broccoli.
