Amazing Elote Recipe: 4 Steps to Heavenly Corn Joy

Description

Elote, also known as Mexican street corn, is a popular snack made with fresh corn on the cob, slathered in a creamy, tangy sauce, and topped with cheese and chili powder.


Ingredients

  • 4 ears of fresh corn on the cob, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/4 cup finely crumbled cotija cheese, plus more for garnish
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder, plus more for dusting
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Fresh cilantro, chopped, for garnish (optional)


Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the husked corn directly on the grill grates. Grill for 10-15 minutes, turning occasionally, until the corn is tender and slightly charred in spots.
  3. While the corn grills, prepare the creamy sauce. In a medium bowl, combine the mayonnaise, sour cream (or Mexican crema), 1/4 cup cotija cheese, lime juice, chili powder, and garlic powder. Stir well to combine. Taste and add salt if needed.
  4. Once the corn is done grilling, remove it from the grill.
  5. Generously slather each ear of warm corn with the prepared creamy sauce.
  6. Sprinkle additional crumbled cotija cheese over each ear of corn.
  7. Lightly dust with more chili powder.
  8. Garnish with fresh chopped cilantro, if desired. Serve immediately.

Notes

  • If you do not have a grill, you can boil or roast the corn. To boil, cook in boiling water for 5-7 minutes. To roast, preheat oven to 400°F (200°C), place corn on a baking sheet, and roast for 20-25 minutes.
  • Cotija cheese can be found in most grocery stores. If unavailable, feta cheese can be a substitute, but it will alter the flavor slightly.
