Description
Elote, also known as Mexican street corn, is a popular snack made with fresh corn on the cob, slathered in a creamy, tangy sauce, and topped with cheese and chili powder.

- 4 ears of fresh corn on the cob, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/4 cup finely crumbled cotija cheese, plus more for garnish
- 1 tablespoon fresh lime juice
- 1/2 teaspoon chili powder, plus more for dusting
- 1/4 teaspoon garlic powder
- Salt to taste
- Fresh cilantro, chopped, for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- Place the husked corn directly on the grill grates. Grill for 10-15 minutes, turning occasionally, until the corn is tender and slightly charred in spots.
- While the corn grills, prepare the creamy sauce. In a medium bowl, combine the mayonnaise, sour cream (or Mexican crema), 1/4 cup cotija cheese, lime juice, chili powder, and garlic powder. Stir well to combine. Taste and add salt if needed.
- Once the corn is done grilling, remove it from the grill.
- Generously slather each ear of warm corn with the prepared creamy sauce.
- Sprinkle additional crumbled cotija cheese over each ear of corn.
- Lightly dust with more chili powder.
- Garnish with fresh chopped cilantro, if desired. Serve immediately.
Notes
- If you do not have a grill, you can boil or roast the corn. To boil, cook in boiling water for 5-7 minutes. To roast, preheat oven to 400°F (200°C), place corn on a baking sheet, and roast for 20-25 minutes.
- Cotija cheese can be found in most grocery stores. If unavailable, feta cheese can be a substitute, but it will alter the flavor slightly.
