  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. Preheat your grill to medium-high heat or prepare your broiler.
  2. Grill or broil the corn until it’s tender and slightly charred, turning occasionally. This will take about 10-15 minutes.
  3. While the corn is grilling, prepare the creamy sauce. In a medium bowl, whisk together the mayonnaise, crema Mexicana (or sour cream), grated cotija cheese, chopped cilantro, lime juice, chili powder, salt, and black pepper until well combined.
  4. Once the corn is cooked, carefully remove it from the grill.
  5. Spread a generous layer of the creamy sauce over each ear of corn, using a brush or spoon to coat it evenly.
  6. Sprinkle additional cotija cheese and chili powder over the sauced corn for an extra burst of flavor and visual appeal.
  7. Serve immediately and enjoy your homemade Elote!

Notes

  • For an authentic taste, use Mexican crema if available. Sour cream is a good substitute.
