Ingredients
Scale
- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup crema Mexicana or sour cream
- 1/4 cup grated cotija cheese, plus more for garnish
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder, plus more for garnish
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your grill to medium-high heat or prepare your broiler.
- Grill or broil the corn until it’s tender and slightly charred, turning occasionally. This will take about 10-15 minutes.
- While the corn is grilling, prepare the creamy sauce. In a medium bowl, whisk together the mayonnaise, crema Mexicana (or sour cream), grated cotija cheese, chopped cilantro, lime juice, chili powder, salt, and black pepper until well combined.
- Once the corn is cooked, carefully remove it from the grill.
- Spread a generous layer of the creamy sauce over each ear of corn, using a brush or spoon to coat it evenly.
- Sprinkle additional cotija cheese and chili powder over the sauced corn for an extra burst of flavor and visual appeal.
- Serve immediately and enjoy your homemade Elote!
Notes
- For an authentic taste, use Mexican crema if available. Sour cream is a good substitute.
- Cotija cheese is a salty, crumbly Mexican cheese. If you can’t find it, queso fresco or even a mild feta can be used in a pinch.
- Adjust the chili powder to your preference for heat.
- If you don’t have a grill, you can boil or roast the corn in the oven.
