Ingredients

  • Egg Whites: 1 cup
  • Cottage Cheese (low fat): 1/4 cup
  • Spinach (chopped): 1/4 cup
  • Red Bell Pepper (diced): 2 tablespoons
  • Monterey Jack Cheese (shredded): 2 tablespoons
  • Salt: 1/4 teaspoon
  • Black Pepper: Pinch


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 6-cup muffin tin well.
  3. In a bowl, whisk the egg whites until slightly frothy.
