Ingredients

- Spinach (chopped): 1/4 cup
- Red Bell Pepper (diced): 2 tablespoons
- Monterey Jack Cheese (shredded): 2 tablespoons
- Salt: 1/4 teaspoon
- Black Pepper: Pinch
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a standard 6-cup muffin tin well.
- In a bowl, whisk the egg whites until slightly frothy.
- Stir in the cottage cheese, chopped spinach, diced red bell pepper, and shredded cheese.
