Description

Make this quick Keto Egg Roll in a Bowl for a flavorful, low-carb dinner. You get all the taste of an egg roll without the hassle of wrappers in one simple skillet.


Ingredients

  • 1 tablespoon sesame oil
  • 1 pound ground pork or turkey
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 bag (14 ounces) coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon hot sauce (optional, for heat)
  • 1/2 teaspoon ground black pepper
  • 2 large eggs, lightly beaten
  • 2 green onions, sliced (for garnish)


Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork or turkey to the skillet. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain off any excess grease.
  3. Stir in the grated ginger and minced garlic. Cook for 1 minute until fragrant.
  4. Add the coleslaw mix to the skillet. Stir well to combine with the meat. Cook until the cabbage starts to wilt slightly, about 3-4 minutes.
  5. Pour in the soy sauce, rice vinegar, and hot sauce (if using). Stir everything together. Season with black pepper. Continue to cook for 2 minutes.
  6. Push the meat and vegetable mixture to one side of the skillet, creating an empty space. Pour the lightly beaten eggs into the empty space. Scramble the eggs quickly until just set.
  7. Stir the scrambled eggs into the rest of the mixture. Heat through for 1 minute.
