  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup brown sugar, packed
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Season the chicken pieces evenly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 3-4 minutes per side until lightly browned. Remove the chicken and set it aside.
  4. In the same skillet, combine the cranberries, orange juice, brown sugar, balsamic vinegar, and thyme. Bring the mixture to a simmer.
  5. Cook the sauce, stirring occasionally, until the cranberries begin to burst and the sauce thickens slightly, about 5-7 minutes.
