This easy one-pot shrimp pasta recipe delivers a flavorful meal with minimal cleanup. It is perfect for a quick weeknight dinner, combining tender shrimp, pasta, and a rich sauce all cooked in a single pot.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 ounces linguine or spaghetti, broken in half
  • 1/2 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the pot and set aside.
  3. Add minced garlic to the pot and cook for 1 minute until fragrant.
  4. Stir in diced tomatoes (with their juice) and chicken broth. Bring the mixture to a boil.
  5. Add the broken linguine or spaghetti to the pot. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  6. Return the cooked shrimp to the pot. Stir in fresh basil and Parmesan cheese.
  7. Season with salt and black pepper to taste.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic.
