- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup mini pepperoni, chopped
- 1/4 cup pizza sauce
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
- In a separate bowl, whisk together the milk, oil, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Top each muffin with a small spoonful of pizza sauce and a sprinkle of the remaining mozzarella cheese.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins freeze well for future lunch packing. Cool completely before freezing in an airtight container.
- You can substitute the pepperoni with cooked, crumbled sausage or diced ham.
