  • 2 cups sliced fresh peaches (about 2 large)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, gently toss the sliced peaches with granulated sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
  3. Unfold the puff pastry sheet onto the prepared baking sheet.
  4. Arrange the peach mixture in the center of the puff pastry, leaving a 2-inch border.
  5. Fold the pastry border up and over the edges of the peaches, pleating as you go to create a rustic crust.
  6. Brush the folded pastry border with the beaten egg wash.
  7. Sprinkle the turbinado sugar over the egg-washed pastry border.
  8. Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the peaches are tender and bubbly.
  9. Let the galette cool slightly on the baking sheet before serving.

  • For an extra touch of flavor, you can add a pinch of nutmeg to the peach mixture.
