Description

Assemble this quick, no-cook parfait using yogurt, lemon zest, and poppy seeds for a fast breakfast or snack.

Ingredients

Scale
  • 1 cup plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon poppy seeds
  • 1/4 cup granola
  • 2 tablespoons fresh blueberries or sliced strawberries

Instructions

  1. In a small bowl, mix the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and poppy seeds until combined.
  2. Select a clear glass or jar for your parfait.
  3. Place one spoonful of the yogurt mixture at the bottom of the glass.
  4. Add a layer of granola over the yogurt.
  5. Add a layer of fresh berries.
  6. Repeat the layers: yogurt, granola, and berries, until the glass is full, ending with a berry or granola topping.
  7. Serve immediately or cover and chill for up to 4 hours.

Notes

  • For a make-ahead option, assemble the parfaits but keep the granola separate until serving time to prevent it from becoming soggy.
  • If you prefer a sweeter taste, increase the honey or maple syrup to 1.5 tablespoons.
  • Use vanilla yogurt instead of plain for a different flavor profile.
