- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh lemon zest
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon poppy seeds
- 1/4 cup granola
- 2 tablespoons fresh blueberries or sliced strawberries
Instructions
- In a small bowl, mix the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and poppy seeds until combined.
- Select a clear glass or jar for your parfait.
- Place one spoonful of the yogurt mixture at the bottom of the glass.
- Add a layer of granola over the yogurt.
- Add a layer of fresh berries.
- Repeat the layers: yogurt, granola, and berries, until the glass is full, ending with a berry or granola topping.
- Serve immediately or cover and chill for up to 4 hours.
Notes
- For a make-ahead option, assemble the parfaits but keep the granola separate until serving time to prevent it from becoming soggy.
- If you prefer a sweeter taste, increase the honey or maple syrup to 1.5 tablespoons.
- Use vanilla yogurt instead of plain for a different flavor profile.
